The official link for What's Up Wednesday isn't until the end of the month, but I thought's I'd share early! Here's what I'm talking about today...
1. What we're eating this week...
We are deep in our first CSA (Community Supported Agriculture) season, so lots of our meals are planned around what's in our CSA box. This week we have summer squash, zucchini, blueberries, blackberries, corn, green bell pepper, onion, cucumber, green beans, and tomatoes. Most recently I used the corn to make this corn risotto from The Table. It used both whole kernels plus a cup of pureed kernels which is such a neat addition to the dish. It tastes like summer!

This pasta dish from here is one of my favorite zucchini dishes so it will definitely make the menu this week. The sauce is made from plain yogurt and lemon; it's creamy with a tangy kick. I usually swap sun dried tomatoes for the fresh ones to give it a flavor boost.

And let's not forget the garden! We are up to our ears in herbs, so I will be whipping up another batch of pesto to use up the basil! Gimme Some Oven has a great recipe - this summer, we've already had it on sandwiches and used it as a pizza sauce.
2. What I'm reminiscing about...
This trip to London! Max and I popped over the pond and played tourist during our first year of marriage. You know, back when we were young and well-rested, ha!
3. What I'm loving...
Summer thunderstorms! Yes, we had these in Arizona as well, but after growing up in California, summer rain is still a bit like spotting a unicorn.
4. What we've been up to...
Food trucks, community pools, concerts in the park, farmers markets... we are taking advantage of our first #summerinthesouth
5. What I'm dreading...
I have a feeling our tomato plant is on its last leg. Remember how the stem was almost chewed through? Well, ever since, it's been on the decline. We have two tomatoes and I'm holding out hope that they will stay to turn ripe!
6. What I'm working on...
Would you believe we still have boxes that are unpacked from the move? They are full of books, which is a problem because our bookcases have been repurposed. So, step one, get a new bookcase!
7. What I'm excited about...
Did you hear? Husby and I are going to become Uncle and Auntie in less than a week! Sister is expecting her first baby any day now!
8. What I'm reading...
I'm all about the magazines this summer! Real Simple, Cooking Light, US Weekly, and Better Homes and Gardens all come right to my door (and I may or may not sneak others in at the check-out counter from time to time ;)
9. What I'm listening to...
Little Man is obsessed with this lady. He requests the CD every time we get in the car, and will bust out his dance moves if we play it in the house. He would listen to his faves (Dear Future Husband, All About That Base, Lips are Moving) on repeat all day long.
10. What I'm wearing...
I'm twelve kinds of obsessed with these shorts. They are inexpensive, look nice on, and best of all, they have an elastic band. Yes, you read that right. It's like wearing pajamas, but better. I never ever want to take mine off so I have several pairs now (they come in tons of colors and patterns).
I'm not gonna lie...I enjoy a good trip to costco too!! And I got a pair of those shorts not to long ago! Love them!!
